Matcha and White Chocolate Cookies

These biscuits are addictive. And it's not just about the caffeine. Crispy on the outside with a subtle green shell, hiding a soft and moist interior.

Ingredients:

-180g Flour
-2 tablespoons Culinary Matcha
- 1 tablespoon of milk powder
-½ teaspoon baking powder
-½ teaspoon of bicarbonate of soda
-1 teaspoon of salt
-120g butter (82% fat content)
-150g icing sugar
-1 L-sized egg
a pinch of vanilla extract
- 120g white chocolate, broken into pieces (not too finely).

Method of execution:

1.Using a mixer on high speed, beat the egg, icing sugar and butter for about 6 minutes.

2.Add the flour, powdered milk, baking powder, bicarbonate of soda, salt and vanilla extract to the beaten mixture. Mix everything thoroughly with a mixer until the ingredients are combined.

3.Finally, add the chopped chocolate and mix to distribute it evenly throughout the mixture.
4.Divide the prepared mixture into 9 parts and roll them into balls. Put the balls in the fridge for about 15 minutes.

5.Preheat the oven to 180 degrees (using the fan oven setting) and bake for about 12–13 minutes.

6.Once they’re done, take the biscuits out of the oven and Let them cool down.

After pulling them out, they will still be very soft – and that’s exactly how they should be, because once they’ve cooled down, they’ll be just right.
